Zucchini with Goat Cheese, Herbs and Almond
Seared zucchinis with creamy goat cheese, blackened exterior, herbed almond crunch, and zesty lemon accents create a visually striking and harmoniously flavorful dish.
Serves 4
Ingredients
2 small zucchini, cut in half lengthways
2 heaping Tbsp soft goat cheese, room temp
3 sprigs dill
3 sprigs parsley
3 sprigs mint
1 handful almonds
1 lemon
1 Tbsp olive oil
Flaky salt and freshly cracked black pepper to season
Method
1. Toast almonds at 160C until golden brown, cool and chop roughly
2. Pick and chop the herbs roughly and mix with chopped almonds
3. Heat a frying pan on high heat, add oil and sear zucchini cut side down until starting to blacken, flip and sear until zucchini just starts to soften, season with salt
4. Spread the goat cheese along the bottom of the plate, arrange the zucchini in a row, cover with herb and almond mixture, grate lemon zest all over the dish with a microplane and squeeze a lemon cheek all over the zucchini
5. Finish with a pinch of salt flakes and freshly ground black pepper
